Dragon Fruit Enzyme

Hey guys.. I bought 2 box-full of dragon fruits in support of my friend who has a dragon fruit farm in Shan state. Each box weight 15Kg so I bought total 30Kg of dragon fruits. After sharing with friends, I still have so many dragon fruits that I can't finish even eating daily.

First thing I tried was making some juice by putting in the blander. I got very thick juice that couldn't even filter it. Taste and smell is same as eating fruit even though I put some sugar and lime juice.

But as I like to brew fermented foods and drinks like kombucha, water kefir, milk kefir and ginger beer, tepache etc.. I decided to make dragon fruit enzyme.

I used 12 liters of water and 1.5Kg of sugar, 3 apples, 2 lemons and dragon fruits. After 4 day, after filtering out the fruits, I collected over 13 liter of enzyme. Probably the extra juice come from the fruit and sugar.

The end product is perfect for me, taste is good, color is really nice. Even a few hours after bottling, it become a bit of carbonated and has sizzling feeling something like sparkling water.

Although the instruction call for storing in the fridge after bottling, I decide to leave all the bottles except one at room temperature to let it ferment before storing in the fridge.

I am not sure whether I should add some honey to the enzyme, but the taste is already very nice.

Dragon fruit enzyme is said to be full of vitamin C and antioxidants that good for your health. And, yes, enzyme is something your body needs.

As I still have left with more dragon fruits, I am thinking of make more enzyme and make dragon fruit jam. I'll post about it if it is successful.
