The city of Cuenca is the third largest in Ecuador, after Quito and Guayaquil. Its location at an altitude of 2500 meters, endows it with a beautiful Andean landscape and a pleasant climate of around 15 degrees of temperature throughout the year.
The historic center of Cuenca, characterized by its architecture from the colonial and republican times and its cobbled streets with cobblestones, were declared Cultural Heritage of Humanity.
Cuenca is one of the first cities founded by the ancient settlers in Ecuador, but that already long before had a long history as a great settlement, first of the Kañari people and then of the Inca culture, as I mentioned in the previous post, about archaeological sites located in the heart of the city.
The Andean cultural heritage is very present among its inhabitants, this is reflected in gastronomy with a marked indigenous influence, where the protagonist is corn in its multiple presentations.

La ciudad de Cuenca es la tercera más grande de Ecuador, después de Quito y Guayaquil. Su ubicación a 2500 metros de altura, la dota de un hermoso paisaje andino y un agradable clima de alrededor de 15 grados de temperatura durante todo el año.
El casco histórico de Cuenca, caracterizado por su arquitectura de la época colonial y republicana y sus calles empedradas y con adoquines, fueron declarados Patrimonio Cultural de la Humanidad.
Cuenca es una de las primeras ciudades fundadas por los antiguos colonos en Ecuador, pero que ya mucho antes tenia una larga historia como gran asentamiento, primero del pueblo Kañari y luego de la cultura Inca, como comente en el post anterior, sobre los yacimientos arqueológicos ubicados en pleno centro de la ciudad.
La herencia cultural andina está muy presente entre sus habitantes, esto se ve reflejado gastronómica con marcada influencia indígena, donde el protagonista es el maíz en sus múltiples presentaciones.
