It has been raining cats & dogs in Delhi NCR reason for about 3 weeks now. It has rained almost every day and this is unusual. Normally it doesn't rain around these months, the rains are limited to the month of July and August. But this year is unusual. September has crossed a record of the past 121 years in India for the amount of rain received.

So there is this delicious, comforting soup that I like to have in the rainy season. It's loaded with seasonal veggies, some nice Chinese sauces, and noodles, of course, because it's noodles soup.

I love this soup with the pad thai (flat noodles) just because they have a nice, silky smooth texture.

The fact that this soup is loaded with vegetables makes it a perfect and filling meal.

I first had this soup in McLeod Ganj. It's a beautiful hill station and I prefer to go there in the rainy season, it's beautiful. Since I had it there, I have been trying to get the perfect recipe. I failed the first few times, but then, found a recipe on youtube from a localite of McLeod Ganj who happened to run a small restaurant there. And that recipe was the best.

I now prepare noodle soup exactly like the one I can find on hill stations. Let me know if you need the recipe, I will drop a post around this.
