Must-Eat in Chiang Khan, Thailand

Today, I'm bringing you to try something we have actually tried the first time ourselves. As I might have mentioned in some of my posts that in Thailand we got 4 separate parts: North, North East, Center and South and each part has their own unique food to their own preference taste. No way I have tried them all even though they are considered 'Thai' food. It's one of those days I have a chance to do something new once again!

Here in Northeastern Thailand, specifically in Chiang Khan that's located just across the river from Lao. They got something that's really Laotian influenced. I have never seen or heard this kind of food elsewhere in Thailand so this is kind of somewhat exciting! It's something they also say that, if you don't try this, you never been to Chiang Khan

Khaopoon Nam Jaew

It's like a mixture of noodle soup and a fresh rice noodle that we usually eat with curry. So it was indeed, for me, interesting.
First it was the fresh rice noodle. Then the broth is from pork making a clear soup yet flavorful. Topped with your choices of pork and pig organs and intestines.

A sprinkles of green onions, cilantros and bean sprouts. One of the most interesting to this is the seasoning we put in ourselves afterwards. Normally for regular noodle soups, we put chilli flakes, sugar, fish sauce, and vinegar.
Here, they have pounded fresh chillis and shrimp paste!!! That is so damn random and I liked experiencing it. There are also a stand of grab-it-yourself fresh veggies and people would just dip the veggies in the shrimp paste as well like, 'What!' (in a good way hehe)

Pa Buawan Khaopoon Nam Jaew

We were looking for a place to eat Khao Poon Nam Jaew as its a must-eat dish when in Chiang Khan. The lady from [the street food stand](https://peakd.com/hive-Khaopoon Nam Jaew. It's located just a few kilometers from the tourist street (which I thought that was a good sign).

We we got there.. not exactly surprised how many people were already there and also some that keep coming. Both for dining in and take away. The place seems clean and always busy.

As mentioned, there are noodles with meat, and with other organs and intestines too. We ordered both as my boyfriend's not really into any kinds of organs. I love all and also all the textures that contrast. Dumped a big pile of pounded fresh chilis in my own bowl, squeeze some lime and we're good to go.

I found it's quite an interesting dish as I have never tried it before. Also, really good for breakfast and it's fast and easy. I can also see it as a late night dinner or a hangover cure. Just lovely with all the ingredients!
