Banana cake is a classic, always tasty and easy to make!
I made this to take for a special celebration of a 'birth circle'. If you are wondering what is a 'birth-circle'? It's a gathering of women to celebrate an upcoming birth of one of them.
To empower her before this beautiful right-of-passage that birth it is. To hug her and honour her for bringing
new life into the world. It was a lovely morning that we shear together, and each of us brought a dish to eat together, and let me tell you- it was a feast!

I made and brought this vegan banana- hazelnut cake that was a great dessert, not to havey or to sweet.
I made it vegan so all the ladies can enjoy the cake. also with no white sugar, as I used honey Instead, to add another layer of flavour, and some health benefits.

I made this cake using a very useful method of mixing all the wet ingredients and in another ball mixing all the dry ingredients. Then mix the wet into dry, add the nuts and...
Walla! Ready to bake.

This next recipe is my own, after much trial and error, I am happy to share it with you all.

To the recipe!

Ingredients:

Wet:

  • 3 raip bananas.
  • 2 TBL of ground flaxseed mix with 2 TBL of water (prepare that in a separate smell dish)
  • 1\4 cup of vegetable oil
  • 1\4 cup of plant based milk ( I used rice milk)
  • 2 TBL chia seed
  • 1\3 honey

Dry:
*2 cups flour

  • 1\2 tsp baking powder
  • 1\2 baking soda
  • 1\8 tsp salt
  • 1 tsp cinnamon
  • 1\8 tsp nut mag
  • 3\4 cup of neutral hazelnuts ( walnuts can work as well, or a mix of these two)

Toppings:
*One banana
*A handful of nuts.

How to make it?
● First, prepare the oven to 180
● Rost your nuts on a hot firing pen, steer it frequently, so the nuts won't burn.

● Mix the flaxseed and water in a small dish and give it five minutes to solidify.
● Mix the wet ingredients, don’t forget to add the flax seeds.
● Mix the dry ingriderned in a separated ball.
● Mix wet batter into the dry and mix just until combined.
● Chop the nuts and add them in. save a handful of nuts to top up the cake. Mix just until combine, be careful from over mixing, that will make the cake very dense and heavy.
● Oil a baking dish and pour the batter in. slice the extra banana horizontally and place it on
top. Add the remaining nuts.

● Say good luck to the cake and put her in the oven for 45 minutes.
